<div>Retire a carne da geladeira 1 hora antes do preparo para que chegue à temperatura ambiente. Ligue o forno ao máximo. Pique bem as folhas do alecrim e o alho e misture com o azeite. Deixe pegar gosto por 15-30 minutos. Coloque a carne em uma assadeira (sempre compatível com a quantidade de carne) untada. Disponha o carré com a curvatura dos ossos para baixo encostando na assadeira. O tempo de forno deve ser de 12 a 15 minutos dependendo do forno. Teste o ponto de cozimento, pressionando a carne com as costas do garfo. Quanto mais elástica, mais crua.<br class="webkit-block-placeholder" /></div>

<div>igue o forno à temperatura média (200ºC). Faça furos no cordeiro com a ponta de uma faca pequena e distribua as lascas do alho nos furos. Besunte o pernil com azeite e um pouco do suco de limão (guarde o restante para usar mais tarde, quando já estiver no forno); tempere com sal, orégano e pimenta. Amarre o pernil com um barbante e dê uma forma agradável. Coloque o pernil numa assadeira e leve ao forno, com a parte mais carnuda para cima, por 30 minutos. Reduza a temperatura e asse por mais 40 minutos, a partir deste momento já sobre o tian (receita abaixo) para obter uma carne rosada. Desligue o fogo e cubra a carne com papel-alumínio. Deixe no forno até o momento de servir. Enquanto isso, faça o molho de hortelã. Aqueça 1/2 xícara (chá) de água numa panela com a geléia de maçã, o açúcar e uma boa pitada de sal, mexendo para amolecer. Quando a geléia estiver dissolvida, passe-a por uma peneira fina. Junte a hortelã, com a geléia ainda quente. Adicione o vinagre e mexa bem. Se desejar, passe por uma peneira novamente para retirar as folhas de hortelã. Sirva com o cordeiro.<br class="webkit-block-placeholder" /></div>

<li>2 colheres de sopa de massa de tomate</li>
<li>1 xícara de chá de vinho branco seco</li>
<li>1 lata de corações de alcachofra em conserva, escorridos</li>
<li>3 colheres de sopa de suco de limão</li>

<p style="font-family:arial;color:#333333;font-size:1em;margin:0 0 15px;"><b>Modo de preparo</b> Derreta a manteiga numa frigideira e frite os cubos de cordeiro até dourá-los ligeiramente. Reserve. Na mesma frigideira, refogue a cebola com alho e salsa. Transfira para uma panela maior e acrescente a carne. Tempere com sal e pimenta, junte a massa de tomate e o vinho branco. Cozinhe em fogo baixo por uma hora e meia. Então, acrescente a alcachofra e o suco de limão. Cozinhe em fogo baixo por mais uma hora e meia. Sirva com arroz e salada.</span></p>

Regue com o leite e deixe marinar por seis horas. Depois, escorra e espalhe a mistura de alecrim, sálvia, orégano, sal e pimenta sobre o pernil. Refogue o cordeiro na manteiga. Quando estiver dourado, acrescente o caldo de carne. Cubra e cozinhe em fogo médio por uma hora. Fatie o pernil e coloque numa travessa. <li>600 g de lombo de cordeiro</li>
<li>2 dentes de alho, sal e pimenta</li>
<li>1 copo de vinho branco</li>
<li>1 colher de sopa de manteiga</li>
<li>1 colher de chá de ervas da Provença (alecrim, tomilho e manjericão)</li>
<li>Batatinhas e tomates cortados ao meio</li>
</ul>
<p style="font-family:arial;color:#333333;font-size:1em;margin:0 0 15px;"><b>Modo de preparo:</b> Tempere o lombo com sal e pimenta. Coloque um pouco de manteiga na frigideira e passe o lombo rapidamente. Reserve. Na mesma panela, doure o alho com as ervas. Acrescente o vinho e mexa, para que tudo se misture ao suco do cordeiro. Deixe o molho reduzir-se (a maior parte do líquido se evapora) e coloque o lombo de volta na panela, por mais cinco minutos. Sirva com as batatas e tomates recheados com farofa e assados no forno.</p>
